We polished Bizen Omachi rice to the utmost limit taking 90 hours (This sake is made by the most refined rice in our company). Also, we demented to using machines as much as we could and were thorough on hand-made even caring steamed rice. The feature of taste is natural and soft umami comes from Bizen Omachi rice, and unique and elegant aroma Junmai Daiginjo has. Also, you enjoy the aftertaste of rice in sake.
